  • 1 lb ground beef (80/20)
  • 4 slices bacon
  • 1 sweet onion sliced
  • 4 slices American cheese
  • 4 brioche hamburger buns
  • salt, pepper, garlic powder to taste
  • iceberg lettuce, thinly sliced tomatoes, pickles, mustard, ketchup for toppings
  • 1 tsp sugar
  • 1/2 tbsp balsamic vinegar


  • Preheat your oven to 400 degrees Fahrenheit.
  • In a small pan, heat olive oil over medium-low heat and add your sliced sweet onions. Stir continuously and cook the onions until they begin to caramelize (25-30 minutes). Add a tsp of sugar to the onions and continue to cook for another 5 minutes. Add a splash of balsamic vinegar, stir into the onions and cook for 30 more seconds. Remove from heat and set aside.
  • Cook the bacon in your skillet over medium heat until crisp. Remove the bacon from the pan and set aside. Drain excess grease.
  • Preheat a cast iron griddle or skillet over medium-high heat with a drizzle of olive oil.
  • Divide the ground beef into 8 equal portions and shape into balls. Season each ball with salt, pepper, and garlic powder.
  • When the cast iron or skillet is hot, place the balls on the hot griddle or skillet and immediately press down firmly with a flat spatula to smash the patty.
  • Cook for 1-2 minutes on each side, until crispy and browned.
  • Add a slice of American cheese to each patty and allow it to melt. Set patties aside.
  • Butter the brioche buns and toast them in the pan you used for cooking the bacon.
