  • 4 cups sweet yellow corn can use frozen or fresh
  • 1 tbsp olive oil extra virgin
  • 3/4 cup red bell pepper diced
  • 3/4 cup red onion diced
  • 1/2 cup fresh cilantro roughly chopped
  • 2 jalapeños diced
  • 1 avocado
  • 2 limes juiced
  • 6 green onions diced
  • 3 tbsp sour cream can substitute with greek yogurt
  • 3/4 cup cotija cheese can substitute with crumbled feta
  • 2 tbsp mayonaise


  • 1 tsp paprika
  • 1 tsp sea salt
  • 1 tsp cumin
  • 1 tsp ground pepper


  • In a small bowl, smash the avocado with a fork, add mayo, sour cream, lime juice, and the dry spices, and mix that all together. Set aside.
  • Heat olive oil in a skillet to medium heat. Once heated, add the sweet corn to the pan and cook for 5 minutes (if using fresh corn) until the corn begins to char, stirring occasionally. If using frozen corn, you'll need around 8-10 minutes until the corn begins to char. While the corn is charring, begin dicing the other vegetables.
  • In a large bowl, add the charred corn, diced vegetable and avocado mixture from the small bowl. Stir until all ingredients are mixed and incorporated with one another.
  • Taste and adjust seasonings and lime juice additions to your preference. Top with a sprinkle of feta or cotija cheese and fresh cilantro. Salud!
