Ingredients
  

  • 3 lbs fresh tomatoes
  • 1 cup yellow onion diced
  • 6 cloves fresh garlic minced
  • 1 qt chicken broth
  • 1/4 cup sour cream can sub with heavy cream
  • 1 tbsp aged balsamic vinegar
  • 2 tbsp salted butter
  • 1/4 cup fresh basil
  • 2 tbsp all purpose flour
  • 1 tbsp granulated sugar
  • kosher salt and cracked black pepper to taste

Instructions
 

  • Preheat oven to 450 degrees Fahrenheit. Lightly grease a baking sheet with oil or cooking spray.
  • Toss onions, garlic, and tomatoes in a large bowl with olive oil, salt and pepper to evenly coat and then place them on your greased baking sheet and roast for 15 minutes.
  • Remove from oven and stir the tomatoes. Return to oven and roast for another 15 minutes, broiling for the last 3 minutes. until the tomatoes are lightly charred. Remove from oven.
  • Add the roasted tomatoes, garlic, and onions to a high powered blender. Add fresh basil and blend until the mixture is smooth (30-45 seconds).
  • In a large pot, melt 2 tbsp of butter over medium-heat. Add flour to the melted butter and whisk to combine. Cook until the mixture is golden brown, about 30 seconds.
  • Add chicken broth and sugar and whisk to combine. Add your blended tomato mixture to the pot, along with 1 tbsp of aged balsamic vinegar, and 1/4 cup of sour cream or heavy cream (optional), and stir to combine.
  • Cook over medium for 15 minutes. Salt and pepper to your preference. Remove and serve alone or with some grilled cheese for maximum comfort dining!
