  • 3 lbs yellow onions diced
  • 1/2 lb shallots diced
  • 4 tbsp unsalted butter
  • 1/4 cup dry white wine sauvignon blanc
  • 1/2 tsp baking soda
  • 4 cloves minced garlic
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 2 bay leaves
  • 4 cups beef stock
  • 4 cups chicken stock
  • 1 French baguette sliced into thin pieces
  • 4 oz gruyere cheese grated
  • 1 tsp dried thyme or 3 sprigs of fresh thyme


  • Turn on the Instant Pot to sauté mode. Reserve 1/3 lbs of diced yellow onions for later. Melt the butter and add the sliced onions and shallots. Add in baking soda and stir to coat the onions in the butter.
  • Sauté the onions for about 15 minutes, stirring occasionally, until they turn soft and caramelized. Pour the excess onion liquid into a measuring cup for later.
  • Add wine and stir the onions for 2-3 minutes, or until the wine reduces.
  • Turn off the sauté mode and add garlic, fish sauce, beef broth, chicken broth, thyme, bay leaves, salt, and black pepper. Add in the reserved onions and reserved onion liquid. Stir everything together.
  • Close the Instant Pot lid and turn the steam release handle to the sealing position. Cook on high pressure for 15 minutes.
  • After the cooking time is complete, allow the pressure to release naturally for 10 minutes, then use the quick release to release any remaining pressure.
  • Preheat the broiler. Ladle the soup into oven-safe bowls and place the toasted French bread on top of each bowl. Optional: brush the bread with butter before placing bread on top of each bowl.
  • Sprinkle gruyere cheese over the top of the bread and soup.
  • Place the bowls under the broiler for 1-2 minutes, or until the cheese is melted and bubbly.
  • Carefully remove the bowls from the oven and serve the soup hot. Enjoy!
