  • 2 lbs beef chuck roast, cut into 1-2 inch pieces
  • 2 tbsp olive oil
  • 1 large onion diced
  • 5 cloves minced garlic
  • 4 cups beef broth
  • 1/4 cup tomato paste
  • 2 tbsp Worcestershire sauce
  • 2 tsp dried thyme
  • 4 large carrots sliced
  • 2 russet potatoes sliced into 1/2 – 1 inch pieces
  • 2 stalks celery sliced
  • 1/4 cup all-purpose flour
  • salt and pepper to taste
  • fresh parsley for garnish


  • Season the beef with salt and pepper all over.
  • Set the Instant Pot to sauté mode and heat the olive oil. Add the beef and cook until browned, about 5-7 minutes.
  • Add the onion and garlic and cook for 2-3 minutes, stirring occasionally.
  • Add the beef broth, tomato paste, Worcestershire sauce, and thyme. Stir everything together.
  • Add the carrots, potatoes, and celery. Stir to combine.
  • Close the Instant Pot lid and set to pressure cook on high for 35 minutes.
  • Once the cooking time is complete, let the pressure release naturally for 10 minutes before quick releasing any remaining pressure.
  • Open the lid and set the Instant Pot to sauté mode.
  • In a small bowl, whisk together the flour with 1/2 cup of water. Slowly pour the mixture into the Instant Pot, stirring continuously until the stew thickens.
  • Serve hot, garnished with fresh parsley.
