This Whole 30 Turkey Lettuce Wrap recipe is a healthy and delicious spinoff of PF Chang's famous recipe. The ground turkey is cooked with garlic, ginger, and green onions before being coated in a savory sauce made with coconut aminos, rice vinegar, sesame oil, and salt and pepper. The lettuce cups are prepared by washing and drying the leaves from a head of iceberg lettuce. The turkey mixture is spooned into each lettuce cup and topped with julienned carrots, sliced almonds, and fresh cilantro. These wraps are low in carbohydrates and calories, high in protein, and perfect for those looking to maintain a healthy diet.

Ingredients
  

For the wrap mixture

  • 1/4 cup coconut aminos
  • 2 tsp sesame oil
  • 1 tsp white wine vinegar
  • 1 tsp fish sauce
  • 1 tbsp almond butter
  • 3 tsp freshly grated ginger
  • 1 tbsp compliant hot sauce Yellowbird sriracha recommended
  • 3 cloves minced garlic
  • 1/2 diced yellow onion
  • 1 cup minced baby bella mushrooms
  • 3/4 cup shredded carrots with a cheese grater
  • 8 oz diced water chestnuts
  • 1 lb ground turkey can substitute for meat of your choice
  • 4 thinly sliced green onions 1 tbsp reserved for sauce
  • 1 head bibb lettuce

For the sauce

  • 1/4 cup coconut aminos
  • 1 tsp sesame oil
  • 1 tbsp compliant hot sauce Yellowbird sriracha recommended
  • 2 tsp rice wine vinegar
  • 1 tbsp thinly sliced green onions reserved from above

For garnishes (optional)

  • sesame seeds
  • thinly sliced green onions

Instructions
 

  • In a small bowl, whisk coconut aminos, hot sauce, sesame oil, fish sauce, almond butter, grated ginger, and rice wine vinegar until fully incorporated.
  • Heat a drizzle of olive oil in a large skillet over medium heat. Add diced yellow onions and cook for 3-4 minutes until onions soften. Add minced baby bella mushrooms and cook for another 3 minutes. Add the minced garlic and cook for 30 seconds until fragrant, stirring consistently.
  • Add ground turkey to the pan, break up the meat and cook until browned. Add shredded carrots and cook for 2-3 minutes, stirring consistently.
  • Pour the coconut amino mixture from the bowl in step 1 into the meat mixture and mix until all ingredients in the pan are fully incorporated. Then add water chestnuts and green onions and cook for 3 minutes, stirring consistently. Turn off heat and set aside.
  • Add all the sauce ingredients and in small bowl and whisk until ingredients are incorporated.
  • Assemble your lettuce wraps using your head of bibb lettuce, fill each leave of lettuce as much meat mixture as desired, garnish with sesame seeds and green onions (optional), and top with the prepared sauce. Enjoy!
