  • 1 tbsp unsalted butter
  • 1 shallot minced
  • 2 cloves minced garlic
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1/4 cup brandy
  • 2 tbsp green peppercorns drained
  • salt and pepper to taste


  • In a medium-sized pan, melt the butter over medium heat. Add the chopped shallot and minced garlic, and sauté for 2-3 minutes until softened.
  • Pour in the beef broth and bring to a simmer. Cook for 5-6 minutes, or until the broth has reduced by about half.
  • Add the heavy cream and brandy to the pan and stir to combine. Bring the mixture to a simmer and cook for an additional 5-6 minutes, or until the sauce has thickened slightly.
  • Stir in the green peppercorns and continue to cook for another 1-2 minutes.
  • Taste the sauce and season with salt and pepper as needed. Keep in mind that the peppercorns will add some heat to the sauce, so start with a small amount of salt and pepper and adjust as necessary.
  • Remove the sauce from the heat and let it cool for a few minutes before serving. If the sauce is too thick, you can thin it out with a little bit of milk or cream.
