Creamy Garlic Tuscan Chicken

  • 1.5 lbs skinless, boneless chicken thighs
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 small yellow onion diced
  • 4 cloves minced garlic
  • 1 tbsp tapioca flour can substitute with arrowroot flour
  • 1 cup chicken broth
  • 1/2 cup coconut milk full fat
  • 1 tsp sea salt
  • 1/2 tbsp stone ground mustard
  • 1 tsp fresh ground pepper
  • 2 tsp Italian seasoning
  • 2 tbsp nutritional yeast
  • 2 cups baby spinach
  • 2/3 cup sun dried tomatoes diced
  • 1 tbsp fresh lemon juice optional


  • Dry chicken thighs and season all over with salt, black pepper, garlic powder, and onion powder. In a large skillet, head a large drizzle of olive oil over medium high heat. Once the skillet is hot, add the chicken thighs and cook for about 6-7 minutes per side until cooked through and remove.
  • Add another drizzle of oil to the pan, add diced onions and cook until onions are translucent, about 4-5 minutes. Add minced garlic cloves and cook until fragrant, about 30-45 seconds.
  • Whisk in tapioca flour into the onions and minced garlic. Add chicken broth and coconut milk and stir until ingredients are incorporated. Add the stone ground mustard, nutritional yeast, and Italian seasoning. Stir and season with salt and pepper to taste. Continue to cook over medium heat until sauce begins to thicken, 3-5 minutes.
  • Add the baby spinach and sun dried tomatoes to the mixture and cook for another 3-4 minutes, until the spinach is cooked and the tomatoes have softened. Add the cooked chicken thighs back to the pan and simmer for 2-3 minutes. Serve over cauliflower rice or with a side of your choosing. Mangia!
